Supper tonight is a quick and simple meal with less sodium, preservatives, fat, and expense than eating out. The pork loin chop is pan broiled with just a dash of iodized sea salt and cracked black pepper to taste. The asparagus was bought frozen but steam in bag with a dash of sea salt and brush of melted butter. Here’s where I blew it: A baked potato that is beyond portion size, with butter, no fat sour cream, and low fat cheddar cheese but no salt. It took about 30 minutes to make this meal. Quick, simple, easy, fairly healthy, proportional, and not cost prohibitive. The pack of pork loin chops were $3.80, asparagus $2.99, 5 lbs bag of potatoes $2.00 divided by 4 = around $2.20 per person. It would be a little more if I include the cost of butter, sour cream, cheese, and labor, but I think you get the idea. One of my friends who eats out nearly every day said, “you’re eating better than I am!” Yes we are and that’s the whole idea!
